Summer is the time to let loose with your energy levels and what better way to restore the oomph in your day with a crunchy sweetener – Atlanta’s sugar chocolate spice cookies. These cookies are a popular treat to cook during the holiday period, but really, you could gobble up these chocolate treats all year around.

Enjoy this easy chocolate spice cookies recipe by chef Emma Colon and take them with you for your next road trip or outdoor adventure as a snack – that’s if you don’t eat them all beforehand!

Atlanta’s Sugar Chocolate Spice Cookies (makes 36 cookies)

Ingredients

230g butter, unsalted
300g sugar
2 eggs
1 tsp vanilla
30ml milk
85g cocoa powder
400g ap flour
1 tsp salt
1 tsp baking powder
1 tsp cinnamon
¾ tsp cayenne powder
sanding sugar, for decoration

Instructions

In a stand mixer fitted with the paddle attachment, cream together the butter and sugar at medium speed. Add eggs, one at a time. Add milk and vanilla.

Sift dry ingredients together. Add dry ingredients in three parts, mixing gently between each addition.

Be careful not to over mix the dough.

Once the dough is ready, scoop into desired size (a 30g scoop works best). Roll each cookie in sanding sugar.

Place cookies onto a parchment lined sheet pan and bake for 8-12 minutes at 175 degrees Celsius.

Serve all 36 chocolate spice cookies on a big tray with tall glasses of milk.

Make it an eating challenge. Put as many cookies into your mouth as can fit and wash down with milk.
